Strawberry Cookie Pizza
- 20 ounces refrigerated sugar cookie dough
- 3 ounces cream cheese softened
- 2 tablespoons sugar
- 2 tablespoons orange juice
- bananas 1 sm.
- 1 1/2 cups strawberries sliced
- 1/2 cup pineapple drained, tidbits
- 1/4 cup jello strawberry, or jam
- Cut half of cookie dough into 1/2 inch thick slices (chill remaining dough for later or bake according to package directions). Arrange the sliced dough or on an ungreased baking sheet to form an 8 inch circle or smaller (pizza pan).
- Bake the cookie crust in a 400 degree oven for about 12 minutes or until the crust is done. Cool for 5 minutes on the baking sheet. Using a spatula, loosen the edges of the crust and transfer to a wire rack to cool.
- In a small mixing bowl, beat the cream cheese, sugar and 2 tablespoons of orange juice with an electric mixer until fluffy. Spread over the cooled crust.
- Thinly angle slice the banana. Brush with additional orange juice to prevent browning. Arrange evenly over crust, and cream cheese, strawberries and pineapple.
- Heat the jelly or jam on low heat until melted. Drizzle over the pizza into wedges to serve. Store any remaining pizza covered in the refrigerator. Makes 6 servings.
