Cinnamon-Spiced Ginger Crisps
- 2 c. all-purpose flour
- sugar
- 1 egg
- 3/4 c. softened butter or margarine
- 1/2 c. dark molasses
- 1 1/2 tsp. ground ginger
- 1/2 tsp. cinnamon
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- Preheat oven to 375u0b0.
- Three hours before, mix at low speed all ingredients until moistened, then mix at medium for 2 minutes. Wrap dough in waxed paper, refrigerating for 1 hour.
- On lightly floured surface, divide dough into 72 equal pieces.
- Roll a piece into ball.
- Coat a ball with sugar.
- Place 2-inches apart on cookie sheet.
- Flatten ball with bottom of a glass to 1/8-inch thick circle.
- Sprinkle slightly with sugar.
- Bake 8 to 10 minutes until lightly browned around edges.
- Cool 2 minutes, then carefully remove to wire racks.
- Cool.
- Makes 6 dozen.
