Pesto Cake
- 1 7/16 cups all purpose flour
- 1 teaspoon baking powder
- 7 3/8 tablespoons extra-virgin olive oil
- 3 eggs
- 7/8 cup pesto sauce good quality variety
- 5/8 cup pecorino cheese grated
- 1/4 cup pine nuts un-toasted
- Preheat the oven to 180 degrees Celsius.
- Toast the pine nuts in a non-stick pan.
- Beat the eggs with the oil and the pesto sauce in a bowl.
- In another bowl, combine the flour with the baking powder and the cheese.
- Add the liquid ingredients to the dry ingredients.
- Last, add the toasted pine nuts to the mixture.
- Butter and flour a springform pan and pour the batter inside.
- Garnish the top with a few of the pine nuts, and bake for approximately 30 to 35 minutes (until a toothpick inserted in the center comes out clean).
- Remove the cake from the oven and serve.
