Sorrento-Style Eggplant Rolls
- 2 eggplant large
- 1 13/16 cups mozzarella cheese sliced
- 2/3 cup ham sliced into thin strips
- tomatoes
- sauce
- grated Parmesan cheese
- 3 basil leaves
- extra-virgin olive oil
- Clean and wash the eggplants, then slice them into rounds approximately 1/2 centimeters in thickness, and soak them in cold water for approximately 20 minutes.
- Rinse the eggplant slices, dry them well and grill them on a griddle.
- Place a slice of mozzarella cheese and some ham on each slice of eggplant.
- Roll up each of the eggplant slices.
- Grease a baking dish and place the eggplant rolls inside.
- Cover with tomato sauce and sprinkle with the Parmesan cheese.
- Bake at 180C for 20 minutes.
- Turn off the oven and let the eggplant rolls rest.
- Serve the eggplant rolls warm garnished with basil.
