Sorrento-Style Eggplant Rolls

  1. Clean and wash the eggplants, then slice them into rounds approximately 1/2 centimeters in thickness, and soak them in cold water for approximately 20 minutes.
  2. Rinse the eggplant slices, dry them well and grill them on a griddle.
  3. Place a slice of mozzarella cheese and some ham on each slice of eggplant.
  4. Roll up each of the eggplant slices.
  5. Grease a baking dish and place the eggplant rolls inside.
  6. Cover with tomato sauce and sprinkle with the Parmesan cheese.
  7. Bake at 180C for 20 minutes.
  8. Turn off the oven and let the eggplant rolls rest.
  9. Serve the eggplant rolls warm garnished with basil.
