Savory Pesto Bread
- 1 fresh basil bundle
- 1/2 cup Parmesan
- 3 9/16 tablespoons pine nuts
- 1 clove garlic
- 7 1/8 tablespoons oil
- 4 teaspoons baking powder
- 1 7/16 cups flour
- 3 medium eggs
- 1 cup manchego cheese grated, or Parmesan
- 1/2 teaspoon salt
- Preheat the oven to 200 degrees Celsius.
- Mix the basil, parmesan, pine nuts, and garlic together in a food processor or blender and puree. Add the olive oil. Set aside.
- Sift the baking powder and flour together.
- Add the eggs to the pesto, mix well, and add the flour mixture. Beat until homogenous.
- Stir in the grated cheese and mix well.
- Pour the batter into a baking pan lined with parchment paper. Spread evenly into the pan with a spatula. Bake for 35 to 40 minutes.
- Remove from oven, remove from pan, and cool on a rack before serving.
