Mixed Seafood Noodles With Garlic Sauce
- 2 squid large, bodies, cleaned, scored, cut into 3/4 inch slices
- 12 prawns large raw, peeled, deveined, tails intact
- 2 cloves garlic minced
- 2 tablespoons vegetable oil
- 1 red onion medium, halved, cut into thin wedges
- 1 red bell pepper medium, sliced
- 3 1/2 ounces green beans topped, cut in half diagonally
- 8 3/4 ounces noodles soaked in boiling water for 3 mins, or until soft, drained
- 2 tablespoons soy sauce
- 3 1/2 ounces baby spinach
- 1 tablespoon sesame seeds toasted
- Combine squid, prawns, garlic and 1 tbsp oil. Cover with plastic wrap and chill for 10 mins to marinate.
- Heat a wok or large frying pan over medium-high heat. Add remaining oil then stir-fry seafood, in batches, for 2-3 mins, or until cooked through. Set aside. Add onion, red pepper and green beans and cook for 2-3 mins. Return seafood to pan along with noodles, soy sauce and spinach. Toss until spinach wilts.
- Distribute between serving bowls. Sprinkle with sesame seeds. Serve immediately.
