Mexi-Corn Lasagna
- 1 lb. hamburger
- 1 can corn
- 15 oz. tomato sauce
- 1 c. salsa
- 1 Tbsp. chili powder
- 1/2 tsp. cumin
- 2 eggs
- 1/4 c. Parmesan cheese
- 1 tsp. oregano
- 1/2 tsp. garlic salt
- 12 corn tortillas
- 1 c. grated Cheddar cheese
- 1 (16 oz.) cottage cheese or Ricotta cheese
- Brown hamburger, drain.
- Add corn, tomato sauce, salsa, chili powder and cumin.
- In bowltombine
- othertngredients except tortillas and Cheddar cheese.
- Arrange
- 6
- tortillas on bottom and up sides of 9 x 13-inch pan.
- Top with 1/2 the meat mixture, cheese mixture on meat, 6 tortillas
- layer next.
- Top withteat mixture.
- Bake at 375u0b0 fort0
- minutes.
- Sprinkle with Cheddar cheese and serve.
