Potato, Bacon And Apple Skewers With Lemon Dip
- 1 1/2 pounds new potatoes
- 7 ounces creme fraiche
- 1 lemon grated peel only
- 1 pinch sugar
- 3 tablespoons honey
- 1/2 teaspoon red pepper flakes
- 1 red apple cored and cut into wedges
- 8 slices bacon each cut into 3 pieces
- 24 sage leaves
- 2 red onions cut into wedges
- Cook the potatoes in salted boiling water for 15-20 mins until just tender. Drain. Set aside to cool.
- For the lemon dip, mix the creme fraiche, lemon peel and sugar. Season to taste with salt and freshly ground black pepper.
- For the marinade, mix the honey with 1 tbsp water and the red pepper flakes. Set aside.
- Thread the potatoes onto 8 metal (or pre-soaked wooden) skewers with the apple, bacon, sage and onion. Brush with some of the marinade.
- Heat a greased nonstick grill pan. Grill the skewers for 8-10 mins, turning occasionally and brushing several times with the marinade. Serve with the lemon dip.
