Chili And Chocolate Cake
- 7 ounces chocolate minimum 70 % chocolate solids
- 7/8 cup butter
- 3/4 cup sugar
- 5 eggs
- 2 tablespoons flour
- 1 pinch salt
- 1/4 teaspoon allspice or Jamaican pepper
- 1/2 teaspoon ground chili
- Line a springform cake tin (21 centimeters) with parchment paper or grease well with butter. Set aside.
- Preheat the oven to 180C.
- Break up the chocolate and butter into small pieces and place in a microwaveable bowl.
- Melt the chocolate and butter in the microwave on medium, stopping every minute to stir.
- Add the sugar and allow to cool.
- Add the eggs, one at a time, while stirring continuously.
- Add the flour, salt, allspice, and chili. Stir with a spatula and mix well.
- Place into the cake tin and bake for 25 minutes. (The center will appear slightly soft.)
- Serve warm and sprinkled with cocoa powder.
- Alternatively, sprinkle with a mixture of cocoa powder and chili.
