Roasted Cod With Tomato Relish

  1. Preheat oven to 400u0b0F.
  2. Place fish on a lightly greased baking sheet. Season generously then drizzle with olive oil and lemon juice. Bake for 15-20 mins, until opaque and cooked to your liking.
  3. Meanwhile, to make the tomato relish, combine sun-dried tomatoes, reserved oil, basil and olives in a bowl. Season.
  4. Place a bed of green beans on 4 serving plates. Top with roasted cod then spoon tomato relish over fish. Serve immediately.
