Sausage Potatoes

  1. Crumble sausage and fry until brown; drain and rinse with hot water.
  2. Peel and cube potatoes; boil until tender.
  3. Drain and return to pan.
  4. Mix potatoes, sausage, soup, mushrooms, onions, milk and 1 cup of the Cheddar cheese.
  5. Mix until cheese is melted and potatoes are well coated, taking care not to mash potatoes too much.
  6. Place in baking dish.
  7. Bake at 350u0b0 for 1/2 hour. Sprinkle remaining 1/2 cup of cheese over top.
  8. Place back in oven until cheese is melted.
  9. Garnish with chopped scallions and serve.
