Indian Rice With Chicken
- 2 tablespoons butter
- 1/4 cup long grain white rice uncooked
- 1 pinch ground cinnamon
- 1 pinch ground cumin
- 1 pinch cayenne pepper
- 1/2 cup vegetable broth reduced-sodium
- 3 tablespoons frozen peas
- 2 tablespoons chopped almonds
- 1 boneless skinless chicken breast half, diced
- 1 pinch paprika
- Melt 1 tbsp butter in a medium saucepan over medium heat. Add the rice, cinnamon, cumin and cayenne and stir for 1 min. Stir in the broth, peas and almonds and bring to a boil. Reduce heat, cover and simmer over low heat for 18-20 mins until the rice is tender and liquid is absorbed. Meanwhile, in a bowl, toss the chicken with the paprika; season with salt and pepper. Melt the remaining 1 tbsp butter in a nonstick skillet over medium-high heat. Add the chicken and stir-fry for 5-6 mins until cooked through. Stir into the rice mixture and mix well. Serve hot.
