Quick & Easy ~ Black Beans & Rice!
- 1 cup rice uncooked
- 1 pint grape tomatoes - halved
- 3 scallions bunchs, - chopped
- 1 head garlic - crushed& chopped
- 1 bell pepper - chopped
- 1 bunch cilantro - chopped
- 1 jalapeno - chopped with seeds
- 29 ounces black beans can of, rinsed& drained
- olive oil - for drizzling
- 1 tablespoon rub - LivingtheGourmet Spice
- 1 teaspoon cumin
- 1 teaspoon brown sugar
- 1 juice lime
- Prepare the rice as directed.
- Heat a large frying pan with a few drizzles of olive oil. Add the tomatoes, scallions, garlic, bell pepper, cilantro and Jalapeno. Saute for a minute or two or until the garlic is fragrant.
- Add the cooked rice to the sauteed veggies and toss. Add the beans, toss and continue to cook on low until everything is evenly heated.
- Combine the ingredients for the seasoning. Add to the rice and beans and again toss.
