Hunter Style Chicken

  1. Saute bacon in large skillet until partially cooked, then saute onion in same skillet until onion is tender.
  2. Remove bacon and onion; set aside.
  3. Drain drippings from skillet, reserving 2 tablespoons.
  4. Brown chicken in remaining drippings, sprinkle lightly with salt and pepper.
  5. Drain excess fat.
  6. Combine cooked bacon, onion, tomatoes, 57 sauce and sugar. Pour over chicken. Cover, simmer 40 to 45 minutes or until chicken is tender, basting occasionally.
  7. Thicken sauce with flour/water mixture, if desired. Serve over rice.
  8. Makes 4 to 5 servings.
