Hunter Style Chicken
- 4 slices bacon, cut into 1-inch pieces
- 1 medium onion, sliced
- 2 to 2 1/2 lb. fryer
- salt and pepper to suit
- 1 (16 oz.) can tomatoes, cut into bite size pieces
- 1/2 c. Heinz 57 sauce
- 1 Tbsp. sugar
- hot buttered rice
- Saute bacon in large skillet until partially cooked, then saute onion in same skillet until onion is tender.
- Remove bacon and onion; set aside.
- Drain drippings from skillet, reserving 2 tablespoons.
- Brown chicken in remaining drippings, sprinkle lightly with salt and pepper.
- Drain excess fat.
- Combine cooked bacon, onion, tomatoes, 57 sauce and sugar. Pour over chicken. Cover, simmer 40 to 45 minutes or until chicken is tender, basting occasionally.
- Thicken sauce with flour/water mixture, if desired. Serve over rice.
- Makes 4 to 5 servings.
