Damn Good Chili*
- 2 lb. coarse ground round
- 1 large onion, chopped
- 1 large green pepper, chopped
- 1 (8 oz.) can tomato sauce
- 1 (8 oz.) can water
- 1 Tbsp. chili powder
- 1/4 tsp. cayenne pepper
- 1/2 tsp. black pepper
- 1/2 tsp. oregano
- 1 tsp. ground cumin
- 2 cloves garlic, finely chopped
- 1 tsp. salt
- 1 (16 oz.) can kidney beans, drained and rinsed
- Heat cooker and brown meat, onion and green pepper.
- Add remaining ingredients except kidney beans.
- Close cover securely. Place pressure regulator on vent pipe.
- Cook 5 minutes.
- Let pressure drop of its own accord.
- Add kidney beans and heat through.
- Up to 2 cans of beans may be added.
- Increase cayenne or chili powder for hotter chili.
