Extra Virgin Olive Oil Chocolate And Hazelnut Cookies

  1. Knead together the flour, hazelnuts, sugar, cocoa, oil, egg yolks, baking powder, and a pinch of salt.
  2. Shape the dough into a ball and cover it in plastic wrap. Refrigerate the dough for approximately 40 minutes.
  3. Preheat the oven to 170C.
  4. Roll out the dough to a thickness of 1/2 centimeter and use a round cookie cutter to cut out the cookies.
  5. Place the cookies on a wax paper-lined baking sheet and bake for approximately 13 minutes.
  6. Remove the cookies from the oven and cool them on a wire rack.
