Extra Virgin Olive Oil Chocolate And Hazelnut Cookies
- 1 7/16 cups flour
- 1 cup hazelnuts toasted and ground
- 3/4 cup sugar
- 15/16 cup cocoa bittersweet, powdered
- 5/8 cup extra-virgin olive oil
- 2 egg yolks
- 1/2 teaspoon baking powder
- salt
- Knead together the flour, hazelnuts, sugar, cocoa, oil, egg yolks, baking powder, and a pinch of salt.
- Shape the dough into a ball and cover it in plastic wrap. Refrigerate the dough for approximately 40 minutes.
- Preheat the oven to 170C.
- Roll out the dough to a thickness of 1/2 centimeter and use a round cookie cutter to cut out the cookies.
- Place the cookies on a wax paper-lined baking sheet and bake for approximately 13 minutes.
- Remove the cookies from the oven and cool them on a wire rack.
