Spiced Pork Chops And Apple Chutney

  1. Melt butter in medium sized sauce pan over medium-high heat, fry sage leaves until crisp (about 2 minutes). Remove sage leaves and set aside for garnish.
  2. In the same pan add the cider vinegar, sugar, ginger, nutmeg, shallot, and apples. Reduce to medium heat and cook until apples soften, stirring occasionally.
  3. In a 12 inch saute pan, heat 2 tbsp olive oil over medium-high heat.
  4. Rinse pork chops and pat dry. Season with salt, pepper, and cumin. Add to pan and sear both sides, about 2 minutes each. Reduce to medium heat and let them cook through, about 5 minutes.
  5. Serve pork chops topped with chutney and garnished with whole sage leaves.
