Spiced Pork Chops And Apple Chutney
- 4 pork chops
- 2 tablespoons olive oil
- 4 Granny Smith apples peeled cored and diced
- 1/2 cup apple cider
- 3 tablespoons butter
- 1 cup brown sugar tightly packed
- 1/2 tablespoon fresh ginger finely minced
- 1/2 tablespoon nutmeg finely grated
- 1/2 tablespoon ground cumin
- 1 tablespoon coarse salt
- 1/2 tablespoon ground black pepper fresh
- 6 sage leaves
- 1 shallot diced
- Melt butter in medium sized sauce pan over medium-high heat, fry sage leaves until crisp (about 2 minutes). Remove sage leaves and set aside for garnish.
- In the same pan add the cider vinegar, sugar, ginger, nutmeg, shallot, and apples. Reduce to medium heat and cook until apples soften, stirring occasionally.
- In a 12 inch saute pan, heat 2 tbsp olive oil over medium-high heat.
- Rinse pork chops and pat dry. Season with salt, pepper, and cumin. Add to pan and sear both sides, about 2 minutes each. Reduce to medium heat and let them cook through, about 5 minutes.
- Serve pork chops topped with chutney and garnished with whole sage leaves.
