Carol'S Prize Winning Pineapple Cheese Cake
- 3/4 c. flour
- 1 tsp. baking powder
- 1/2 c. milk
- 3 Tbsp. butter or margarine
- 1 large or extra large egg
- 1 pkg. vanilla pudding mix (not instant)
- 1 (15 oz.) can sliced pineapple, drained (reserve juice)
- 1 (8 oz.) pkg. cream cheese, softened
- 1/4 c. sugar
- 3 Tbsp. juice reserved from fruit
- 1 Tbsp. sugar
- 1/2 tsp. cinnamon
- Grease the bottom of a 10-inch glass pie pan with margarine. Combine the first 6 ingredients.
- Beat 2 minutes at medium speed with electric mixer.
- Pour into pan.
- Pat pineapple dry with a paper towel and place over batter.
- Combine cream cheese, 1/4 cup sugar and 3 tablespoons pineapple juice.
- Beat 2 minutes.
- Spoon on top of fruit, leaving 1-inch from sides.
- Mix 1 tablespoon sugar and cinnamon; sprinkle on top.
- Bake approximately 35 minutes at 350u0b0.
- Cool and serve.
- Refrigerate leftovers.
