Carol'S Prize Winning Pineapple Cheese Cake

  1. Grease the bottom of a 10-inch glass pie pan with margarine. Combine the first 6 ingredients.
  2. Beat 2 minutes at medium speed with electric mixer.
  3. Pour into pan.
  4. Pat pineapple dry with a paper towel and place over batter.
  5. Combine cream cheese, 1/4 cup sugar and 3 tablespoons pineapple juice.
  6. Beat 2 minutes.
  7. Spoon on top of fruit, leaving 1-inch from sides.
  8. Mix 1 tablespoon sugar and cinnamon; sprinkle on top.
  9. Bake approximately 35 minutes at 350u0b0.
  10. Cool and serve.
  11. Refrigerate leftovers.
