Turkey Polpettone With Marinara Sauce
- 2 pounds ground turkey
- 2 slices bread soft fresh, crumbled
- 2 egg yolks
- 4 tablespoons green onion thinly sliced
- 1 tablespoon sage leaves chopped fresh
- 1 teaspoon worcestershire sauce
- 1 tablespoon grated lemon zest
- 6 ounces mozzarella cheese whole-milk, cut into 1 inch cubes
- 1 jar marinara your favorite, or see recipe below for easy Homemade Marinara
- 1 bag spinach baby leaf
- salt
- Pre-Heat Oven to 350u0b0
- Put the turkey in a bowl. Add the bread crumbs, egg yolks, onion, sage, Worchester, and lemon zest and mix them in by hand very gently. Do not over mix the turkey mixture; the less you handle it the lighter it is. Add the cubed mozzarella, salt and pepper and again, with your hand, gently combine it into the mixture.
- Form a "loaf" with the turkey mixture on a baking sheet or a 13 x 9" cake pan. If using the cake pan do not spread it out to fit the pan, again form a "loaf" with it.
- After 45 minutes, put the spinach around the turkey loaf and spoon some of the marinara sauce over the loaf and spinach. Put it back in the oven for another 15 minutes. Total bake time should be 1 hour or until internal temperature is 165u0b0. Let rest 7 minutes before slicing.
