Creamy Tagliatelle With Italian Sausage Meatballs

  1. Using a knife, remove the sausages from their casings.
  2. With wet hands, form the meat into small meatballs. season with the Italian seasoning and the ready-made pasta sauce.
  3. Heat a touch of olive oil in a frying pan and saute the meatballs until they are golden brown.
  4. While the meatballs are cooking, boil a pot of water seasoned with salt and a touch of olive oil. Once boiling, add the pasta and cook according to package instructions.
  5. In a bowl, beat the egg yolks and slowly add in the cream, half of the parmesan, the lemon zest, and the chopped parsley.
  6. Drain the noodles and return them to the pot. Stir in the yolk mixture.
  7. Add the meatballs and continue to mix well so that the heat of the noodles cooks the egg yolks.
  8. Sprinkle with the remaining parmesan and serve immediately.
