New Take On Mac & Cheese
- 1 1/2 pounds cavatappi noodles
- 3 1/2 cups milk
- Butter
- 1/4 flour
- 1 pound swiss
- 1 pound Monterey jack
- Crispy bacon
- Spicy Dijon Mustard
- 1/4 basil
- 2 tsps rosemary
- Ground pepper
- Salt
- Cup parmesan panko bread crumbs
- Preheat oven to 375
- Grease baking dish, sprinkle bottom with bread crumbs
- Large pot salted water to boil, cook pasta until al dente, drain & set aside
- Pour milk in saucepan and simmer
- Melt butter over medium heat, combine with milk. Add flour and stir. Cook for two minutes until sauce thickens, remove from heat, combine with cheese, half of bacon, mustard, herbs and pepper. Season to taste with salt. Add noodles and combine. Pour into baking dish.
- Combine remaining bread crumbs and bacon. Top Mac and cheese with a dot of butter.
- Place in oven until golden brown -45 minutes.
