No-Grilling Turkey Reuben

  1. In this version of a Reuben, lightly toast the bread instead of spreading butter on it and grilling it, which for me causes a heavy, greasy taste and feel. So much healthier and tastes great.
  2. Spread a little mayo and Dijon mustard on each slice of bread and pile one slice high with the pepper turkey. The pepper on the turkey adds a nice kick.
  3. Press the liquid out of about 1/4 cup of Bubbies Old Fashioned Sauerkraut so it is as dry as possible and cover the turkey with it.
  4. Lay down a slice of Swiss cheese and top with the other slice of bread, then cut in half.
  5. Garnish with the black olives and cornichon pickles. The cornichons are a little spicy hot and are a great accompaniment.
  6. Serve with a small portion of lower sodium real potato chips on the side. Look for chips with only potatoes, oil and salt in the ingredient list.
