Enchilada Casserole
- 2 lb. hamburger meat
- 1 can tomato sauce
- 1 can tomatoes and green chilies
- 1 pkg. taco seasoning mix
- 1 doz. corn tortillas
- 1 can cream of chicken soup
- 3/4 c. milk
- 2 c. grated Cheddar cheese
- 1 onion, chopped
- 1 garlic
- 1 tsp. chili powder
- salt and pepper to taste
- Brown meat, onions and garlic; drain.
- Add sauce, tomatoes and spices.
- Line bottom of 9 x 13-inch pan with tortillas (torn in small pieces).
- Pour in 1/2 meat mixture, another layer of tortillas and rest of meat mixture.
- Add another layer of tortillas.
- Mix soup and milk and pour over top.
- Sprinkle with cheese.
- Bake at 350u0b0 for 45 minutes.
- Serves 8 to 10 .
