Low Carb Cinnamon Pecan Scones
- 2 cups almond flour
- 2 tablespoons stevia granulated
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 large egg
- 1/4 cup butter softened
- 2 tablespoons almond milk
- 1/2 teaspoon vanilla extract
- 8 drops liquid stevia or to taste
- 1/4 cup dried cranberries
- 3 tablespoons stevia granulated, topping
- 2 teaspoons cinnamon
- 1/4 cup pecans chopped
- Cinnamon Pecan Sconesnre heat your oven to 350 degrees Farenheit. Spray a baking sheet with non-stick spray and lay a sheet of parchment paper over your baking sheet. Spray your parchment paper with non-stick spray.
- Gather all of your ingredients. Mix all the dry together with a whisk. In a separate bowl, mix all your wet ingredients. Add your dry ingredients to your wet ingredients and mix until all of your ingredients are incorporated.
- Place your dough on your prepared cookie sheet and using a rubber spatula, spread into an even circle (or as even as you can get it). Make sure that the thickness is pretty much the same all the way through.
- Add your topping mixture on top of your dough and lightly pat it in.
- Bake for 12-15 minutes. It should be lightly golden brown. Let cool for 10 minutes and slice as desired (I sliced mine into 8 triangles).
