Chili Pasta
- 14 ounces penne
- 1 tablespoon olive oil
- 1 onion peeled and chopped
- 1 clove garlic peeled and crushed
- 3 1/2 ounces salami or other sausage, cut into strips
- 15 ounces red kidney beans in chili sauce
- 15 ounces chopped tomatoes
- 1 tablespoon basil leaves roughly chopped
- 1/2 cup feta crumbled

- Cook the pasta in plenty of boiling salted water for 10 mins, until just tender.
- Meanwhile, heat the oil in a large skillet on medium. Saute the onion and garlic for 2 mins, until tender. Add the salami strips and cook, stirring for 3 mins.
- Stir in beans and tomatoes, and bring to boil. Reduce heat and simmer the mixture for 3 mins. Season to taste.
- Drain the pasta and return to the pan. Toss with the sauce and basil. Top with feta and serve with bread and salad, if desired.
