Banana Walnut Sundae
- 2 tablespoons melted butter
- 3 bananas
- 1/4 cup shredded coconut
- 1/4 cup coconut flour
- 1/4 cup applesauce unsweetened
- 1 cup walnuts
- 1/8 cup dark chocolate chips optional
- BANANA ICE CREAM -nlice 2 bananas and place in sealable bag/containernlace in freezer for 1 hour, until completely frozennnce frozen, add to high powered blender and blend until smooth and creamynlace mixture in container and place in freezer until set, about 2 hours
- Preheat Oven to 325 degrees
- In food processor, chop walnuts until very fine
- In medium bowl, combine melted butter, 1 banana, and shredded coconut. Blend with electric mixer until well combinedndd coconut flour, applesauce and walnuts and combine until dough forms
- Press dough into 4 silicone muffin liners, pressing thin layer on bottom and up the sides of liner. Forming a hollow "bowl" in each linernlace in oven for 20 minutes, until golden brown. Remove and let cool completely
- Once banana ice cream is set, add 1 scoop to each walnut muffin cup
- Optional - top with melted dark chocolate (omit for gluten free)
