Whole Wheat Strawberry Cake Recipe

  1. Preheat oven to 350u0b0F (180u0b0C). Butter a 9 inch loaf pan with little butter and line it with parchment paper.
  2. Whisk flour, baking powder and salt together in a small bowl. In a larger bowl, whisk butter and 1/2 Cup sugar until pale and fluffy with hand mixer, for about 3 - 4 minutes. Add egg, milk and vanilla and whisk until just combined.
  3. Add sifted mixture gradually, gently fold the batter until all ingredients combined well.
  4. Pour the batter in the greased loaf pan. Arrange sliced strawberries on top of batter, as closely as possible in a single layer. Sprinkle remaining 2 tablespoons sugar over berries.
  5. Bake cake for 50 minutes to 60 minutes or until a toothpick inserted in the center comes out clean. Let cool in the loaf pan over a wire rack.
  6. Cut into slices and serve Strawberry Cake with a dollop of cream along with a cup of coffee.
