Chicken Loaf
- 4 lb. hen or 2 fryers
- 4 Tbsp. butter
- 1/2 c. chopped celery
- 3/4 c. chopped onions
- 1/8 c. chopped green pepper
- 1/4 c. flour
- 1/8 c. cold water
- 1 c. boiling chicken broth
- 1/2 small jar pimentos, chipped
- 1 can mushroom soup (undiluted)
- salt and pepper
- little red pepper
- 2 eggs, slightly beaten
- 25 or 30 Ritz crackers
- Mix flour in about 1/8 cup cold water and add to chicken broth.
- Cool a minute or so to thicken.
- Add chicken, pimentos, mushroom soup, salt, pepper and red pepper, all to taste.
- Add eggs.
- Crush crackers and add to mixture.
- Add sauteed vegetables. Mix well.
- Pour into 2-quart baking dish.
- Put crumbled crackers (about 15) on top.
- Bake at 325u0b0 or 350u0b0 for 45 minutes.
- Make gravy with 3 cups of broth.
