Turkey Chutney Pilaf
- 1 package Honeysuckle White(R) 99% Fat Free Ground Breast of Turkey
- 5 ounces rice pilaf mix
- 1 tablespoon extra-virgin olive oil
- 1/4 teaspoon curry powder
- 1 cup onion chopped
- 1 green bell pepper large, cut lengthwise into 1/4-inch pieces
- 1 yellow summer squash large, cut into 1/2-inch pieces
- 1 cup chutney prepared fruit
- Prepare rice according to package directions.
- Heat oil in large nonstick skillet.
- Add turkey; crumble and cook until no longer pink, about 5 minutes.
- Sprinkle turkey with curry powder while cooking.
- Remove and keep turkey warm.
- In same skillet, cook onion and green pepper for 1 minute.
- Add squash to skillet, cover and cook 4 minutes, stirring occasionally.
- Add turkey back to skillet and mix in fruit chutney. Heat for 2 minutes.
- Fold in cooked rice pilaf.
