Crispy Chicken With Citrus Soy Dressing
- 1/2 cup all purpose flour
- 6 chicken thighs fat trimmed
- 2 tablespoons vegetable oil
- 2 tablespoons rice wine mirin
- 1 tablespoon lemon juice
- 1 tablespoon lime juice
- 1 teaspoon fresh ginger finely grated
- 1 teaspoon sugar
- 1/4 cup soy sauce
- long grain rice cooked white, to serve
- 2 tablespoons chives finely chopped
- Place flour on a plate and season with salt and pepper. Coat chicken in flour and shake off excess.
- Heat oil in a large pan over high heat. Cook chicken, in batches, for 2-3 mins each side or until golden brown and cooked. Transfer to a heatproof plate. Cover with foil and let rest for 5 mins. Slice thickly.
- To make citrus soy dressing, combine the rice wine, lemon juice, lime juice, ginger, sugar, and soy sauce in a small saucepan over moderate heat. Bring to a boil. Remove from heat. Cool slightly.
- Spoon rice on to plates. Top with chicken and drizzle with dressing. Sprinkle with chives. Serve at once.
