Cherry Vanilla Squares
- 7 tablespoons butter
- 1 1/2 cups 2% milk
- 1 cup sugar + 1 tbsp
- 1 teaspoon dried yeast
- 3 2/3 cups all purpose flour
- 8 eggs
- 3 cups sour cream
- 1 teaspoon vanilla extract
- 2 tablespoons pudding powder vanilla instant
- 2 1/4 pounds cherries cut in half and pitted
- chocolate shavings for decoration
- Melt the butter and add 3/4 cup of milk and heat until luke-warm. Mix 1/2 cup of this milk mixture with 1 tbsp sugar and the yeast and leave for a couple of minutes until it becomes frothy.
- In a bowl, mix the flour, 1 cup of sugar and a pinch of salt. Make a well in the center and add the yeast milk. Mix together, cover and leave in a warm place for 15 minutes. Add the remaining warm milk and 1 egg, knead into a smooth dough, cover and leave for 30 minutes.
- Roll the dough out on a floured surface to 12 x 15 inches, transfer it to the same sized baking sheet which has been greased and dusted with flour. Cover and leave to proof for 15 minutes.
- Heat oven to 350u0b0F. Mix the sour cream, vanilla extract, 7 eggs, pudding powder, 3/4 cup of milk and 1/2 cup of sugar. Distribute the cherries on the dough, add the sour cream mixture and bake for 25 minutes. Leave to cool before cutting into squares and decorating with chocolate shavings.
