Easy Spinach Souffle
- 1/2 c. mayonnaise
- 1/4 c. flour
- 2 Tbsp. grated onion
- 3/4 tsp. salt
- 1/4 tsp. nutmeg
- 1/4 tsp. black pepper
- 1 c. milk
- 1 (10 oz.) pkg. chopped spinach, thawed and drained
- 4 eggs, separated
- 1/4 tsp. cream of tartar
- Heat
- oven to 400u0b0.
- Grease a 2-quart souffle dish.
- In a saucepan, combine mayonnaise, flour, onion, salt, nutmeg and pepper;
- stir
- constantly over medium heat for 1 minute.
- Stir in milk
- until
- smooth.
- Stirtonstantly,
- cook until thick. Remove from heat.ttir in spinach.
- Beat in egg yolks.
- In a small bowl,
- beat egg whites with cream of tartar until stiff peaks form.
- Gently
- fold
- into
- spinach mixture.
- Spoon into prepared dish.
- Place
- on
- lowest
- rack of oven.
- Reduce oven temperature tot75u0b0.
- Bake
- for
- 40 minutes until puffed and golden brown. Serve immediately.terves 4 to 6.
