Easy Spinach Souffle

  1. Heat
  2. oven to 400u0b0.
  3. Grease a 2-quart souffle dish.
  4. In a saucepan, combine mayonnaise, flour, onion, salt, nutmeg and pepper;
  5. stir
  6. constantly over medium heat for 1 minute.
  7. Stir in milk
  8. until
  9. smooth.
  10. Stirtonstantly,
  11. cook until thick. Remove from heat.ttir in spinach.
  12. Beat in egg yolks.
  13. In a small bowl,
  14. beat egg whites with cream of tartar until stiff peaks form.
  15. Gently
  16. fold
  17. into
  18. spinach mixture.
  19. Spoon into prepared dish.
  20. Place
  21. on
  22. lowest
  23. rack of oven.
  24. Reduce oven temperature tot75u0b0.
  25. Bake
  26. for
  27. 40 minutes until puffed and golden brown. Serve immediately.terves 4 to 6.
