Individual Quiche Lorraine
- 6 sheets filo dough eac cut into a 5 inch squares
- 1 onion chopped
- 3 1/2 ounces ham shaved, roughly chopped
- 3/4 cup evaporated milk
- 4 eggs
- 1 teaspoon dijon mustard
- 1 1/2 ounces cheddar cheese grated
- fresh chives to serve
- chili sauce to serve
- salad to serve
- Preheat oven to 350u0b0F. Lightly grease 6 - 4 inch tart pans and line with filo dough. Place on a baking tray and bake for 3-5 mins, until golden brown.
- Meanwhile, heat a small frying pan over high heat. Lightly coat with oil and saute onion for 2-4 mins, until just soft. Add ham and cook for 2 mins. Let cool slightly then distribute between tart shells. Whisk together evaporated milk, eggs and mustard. Season. Distribute between tart shells and sprinkle with cheese. Bake for 30-35 mins, until firm.
- Top with fresh chives and serve with chili sauce and salad on the side.
