Chocolate Dipped Mint Cookies

  1. Preheat the oven to 180 Celsius.
  2. Cream together the butter and the sugar until fluffy. Add the egg yolk and vanilla and mix well.
  3. Sift together the flour, baking powder, and salt.
  4. Add the dry ingredients alternately with the milk to the butter mixture, mixing after each addition and ending with the dry.
  5. When combined, stir in the mint.
  6. Form the dough into 2 logs, each 14 centimeters in length. Cover with plastic wrap and refrigerate until firm, approximately 2 hours.
  7. Remove from oven and slice into cookies approximately 1/2 centimeter thick. Place onto a baking sheet lined with parchment paper approximately 2 centimeters apart.
  8. Bake for 8-10 minutes, until slightly golden on the edges and on the bottom. Let cool.
  9. Melt the chocolate and the shortening together in the microwave. Dip one end of each cookie into the chocolate. Let cool on parchment paper before serving.
