Zesty Seafood Stew
- 2 onions, sliced
- 2 cloves garlic, minced
- 1 Tbsp. olive oil
- 3 tomatoes, diced
- 1/2 c. white wine
- 2 jalapeno peppers, minced
- 1/2 tsp. grated lime zest
- 2 Tbsp. tequila
- 1 bay leaf
- 1/2 tsp. chili powder
- 1/2 tsp. ground cumin
- 1 tsp. salt
- 6 oz. red snapper fillet, cut in strips
- 1/4 lb. scallops
- 8 mussels, scrubbed
- 8 large shrimp
- Put onions, garlic and oil in dish.
- Cover with plastic wrap and vent.
- Microwave on High 2 minutes.
- Add next 9 ingredients; cook 10 minutes, stirring often.
- Add snapper and scallops and cook 2 minutes.
- Cook mussels and shrimp in another dish, covered and vented, 2 minutes.
- Remove shrimp and peel and add to snapper. Continue to cook mussels until open, about 1 minute, and add with juices to snapper.
