Green Granny Smith Apple Sorbet
- 4 1/2 ounces caster sugar
- 10 water fl.oz, 250 ml
- 10 ounces Granny Smith apple
- 1 juice lemon
- Over a high heat in a pan, heat the water and sugar whilst whisking until the sugar has dissolved and it comes to the boil.
- When this happens, take it off the heat.
- Cool the syrup and then refrigerate.
- With the skin still on, core and chop the apples into small pieces.
- Blend with the cool sugar syrup for two to three minutes.
- Strain the mixture through a sieve and then pour into an ice-cream machine and churn for twenty minutes.
- Transfer to a freezerproof container.
- Freeze until serving.
- If you don't have an ice-cream machine, you will need to remove the mixture from the freezer, and whisk with a chilled fork every hour for about three hours to break up the ice crystals, and you may end up with a more granita like texture.
