Chicken And Fava Bean Pasta
- 7 ounces spiral pasta
- 1 tablespoon vegetable oil
- 1 onion thinly sliced
- 1 celery stick sliced
- 1 clove garlic sliced
- 1 chicken bouillon cube crumbled
- 1 cup fava beans frozen, thawed, peeled
- 1/4 cup ricotta fresh smooth
- 5 ounces cooked chicken shredded
- 1 tablespoon fresh dill chopped
- 2 tablespoons shaved Parmesan
- mixed salad to serve
- In a pot of boiling salted water, cook pasta 10 minutes or until tender. Drain and return to pot.
- Meanwhile, heat oil in a pan over moderate heat. Add onion, celery and garlic and cook for 3 minutes or until soft. Add crumbled bouillon cube and 1/2 cup of water and bring to a simmer. Stir in fava beans and simmer 3 minutes or until beans are heated and sauce reduces slightly. Remove pan from heat. Stir in ricotta and chicken until combined. Season with salt and pepper.
- Add chicken mixture and dill to pasta in the pot and toss to combine. Divide between serving bowls. Top with parmesan. Season with pepper. Serve with salad.
