Corn Relish
- 1 tablespoon vegetable oil
- 3 yellow peppers red and, seeded, chopped
- 1 onion chopped
- 1/2 cup apple cider vinegar
- 1/4 cup sugar
- 2 teaspoons turmeric
- 2 teaspoons mustard powder
- 1 teaspoon salt
- 4 corn cobs kernels removed, makes about 3 cups kernels
- 2 teaspoons cornstarch

- In a large, heavy-based saucepan, heat oil on medium. Saute peppers and onion 8-10 mins, until tender.
- Add vinegar, sugar, turmeric, mustard powder and salt. Stir over a low heat until sugar dissolves. Increase heat to high and boil 10 mins. Add corn kernels and boil for another 5 mins.
- Remove 1/4 cup of hot liquid from pan. Add to cornstarch in a small bowl, stirring until smooth. Gradually stir mixture back into pan. Bring to a boil, stirring, until mixture thickens. Simmer 3 mins.
- Spoon mixture into hot sterilized jars and seal. Serve on bread with cheese and ham.
