Crab Cheesecake
- 1 cup butter crackers crushed, such as Ritz
- 3 tablespoons butter melted
- 16 ounces cream cheese softened
- 3 eggs
- 1 cup sour cream divided
- 1 teaspoon fresh lemon juice
- 2 teaspoons onion grated
- 1 teaspoon seafood seasoning
- 2 hot pepper sauce dshs
- 1 teaspoon freshly ground pepper
- 12 ounces crabmeat

- Heat oven to 350 degrees. Mix the butter crackers and butter and use the mixture to line a 9 inch spring form pan. Bake 10 minutes. Set aside to cool.
- Reduce the oven to 325 degrees.
- With an electric mixer, beat cream cheese, eggs and 1/4 cup sour cream until fluffy. Add the lemon juice, onion, seafood seasoning, hot pepper sauce and black pepper. Fold in crabmeat.
- Pour mixture into cooled crust and bake 50 minutes, until the cake sets. Run a knife around the edge of the cake, loosening it from the pan. Cool on a wire rack. Remove the sides of the pan. Spread the cake with the remaining1/2 cup sour cream. Serve with crackers.
