Greek Grain And Quinoa Salad
- 1 cup water
- 1/2 cup truRoots Sprouted Quinoa & Ancient Grain Medley
- 1/2 cup greek vinaigrette dressing
- 2 cups cucumber diced
- 1 cup grape tomatoes halved
- 1/2 cup crumbled feta cheese
- BRING water to a boil in small saucepan. Stir in quinoa & grain medley. Cover with tight-fitting lid and cook over low heat 20 to 25 minutes or until water is absorbed and medley is tender.
- COMBINE medley and salad dressing in medium bowl. Stir until blended.
- STIR in cucumber and tomatoes. Sprinkle with feta cheese. Cover and chill until ready to serve.
- Microwave Cooking Directions
- MICROWAVE 1 1/4 cups water in medium microwave-safe bowl on HIGH 3 minutes or until just beginning to boil. Stir in 1/2 cup quinoa & grain medley. Cover tightly with plastic wrap and microwave on HIGH 5 minutes. Let stand 15 minutes to soften. Stir. Cover and microwave an additional 3 minutes or until tender. Drain, if necessary. Proceed as directed above.
