Angel Hair And Broccoli
- 4 c. broccoli florets
- salt to taste
- 1/4 c. olive oil
- 1/2 stick unsalted butter
- 4 scallions, cut into 1/4 inch pieces
- 1 clove garlic, peeled and crushed
- 2 Tbsp. white wine
- 1 lb. angel hair pasta
- grated Parmesan cheese to taste
- Cook broccoli 3 to 4 minutes until crispy and tender.
- Place in cold water; drain water.
- In small saucepan heat oil and 2 tablespoons butter over medium heat and set aside.
- In large skillet saute scallions and garlic in 2 tablespoons butter for 2 minutes.
- Add wine and simmer 5 minutes.
- Add melted oil and butter with blanched broccoli mix and heat thoroughly.
- Serve over angel hair pasta cooked al dente.
- Sprinkle Parmesan cheese over top to taste.
