Angel Hair And Broccoli

  1. Cook broccoli 3 to 4 minutes until crispy and tender.
  2. Place in cold water; drain water.
  3. In small saucepan heat oil and 2 tablespoons butter over medium heat and set aside.
  4. In large skillet saute scallions and garlic in 2 tablespoons butter for 2 minutes.
  5. Add wine and simmer 5 minutes.
  6. Add melted oil and butter with blanched broccoli mix and heat thoroughly.
  7. Serve over angel hair pasta cooked al dente.
  8. Sprinkle Parmesan cheese over top to taste.
