Orange Curd And Tonka Bean Sbrisolona Cake
- 1 cup flour
- 11/16 cup almonds with their skin
- 1/2 cup sugar
- 5/8 cup cornmeal coarse
- 7 tablespoons butter softened
- 1 egg yolk
- grated orange peel
- 1/2 bean grated Tonka
- 1 orange juice and peel
- 1/2 cup sugar
- 7 tablespoons butter
- 3 egg yolks
- Chop the almonds coarsely and combine them with the flour, sugar, cornmeal, butter, egg yolk, grated orange peel, and the grated Tonka bean in a bowl.
- Mix the ingredients together with a wooden spoon at first, then use your fingers, the dough should resemble oatmeal and crumble easily.
- Refrigerate this mixture for at least 30 minutes.
- In the meantime, prepare the orange curd by placing the orange juice and peel in a bowl with the sugar and mix with a wooden spoon.
- Beat the egg yolks and add them to the bowl.
- Place the bowl over a double boiler and cook, stirring continuously, until the curd thickens.
- Remove the curd from the heat as soon as it reaches the desired consistency and add the softened butter and some more orange peel.
- Stir well to incorporated the butter.
- Assemble the cake by making a layer of dough "crumbs" on the bottom of an 18 centimeter cake pan lined with wax paper and pressing lightly on the crumbs.
- Next, add a generous layer of orange curd and cover with the remaining crumbs.
- Bake in a preheated oven at 160C for approximately 40 minutes.
- Remove the cake from the oven and cool before serving.
