Corned Beef With Parsley Sauce
- 2 1/4 pounds corned beef
- 1 tablespoon brown sugar
- 1 tablespoon vinegar
- 5 whole cloves
- 2 bay leaves
- sauce Parsley
- 3 1/2 tablespoons butter
- 1/2 onion small, finely chopped
- 2 tablespoons flour
- 2 cups milk
- 2 tablespoons fresh parsley chopped
- vegetables steamed, to serve
- mustard to serve
- Place beef in a saucepan with sugar, vinegar, cloves and bay leaves. Add water to cover. Bring to a boil, reduce heat, cover and simmer for around 1 hour 15 mins, until a skewer inserted in corned beef is easily removed. Remove from heat and let cool in liquid.
- Meanwhile, to make the parsley sauce, melt butter over medium heat. Cook onion for 2 mins, until soft. Add flour and cook for 2 mins, stirring. Stir in milk. Bring to a boil, stirring, until thickened. Season. Add parsley.
- Slice beef and serve with parsley sauce, steamed vegetables and mustard.
