{Gluten Free} Cherry Almond Scones With Goat Cheese And Thyme
1 3/4 cups gluten free flour blend
1/2 teaspoon salt
1/3 cup sugar
2 eggs
1/3 cup almond milk or whatever milk you prefer
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup dried cherries
1/2 cup slivered almonds
1/2 cup goat cheese crumbled
2 tablespoons fresh thyme
1/4 cup honey for drizzling if desired
Pre-heat the oven to 400*nnUsing a food processor pulse the four and cold butter together. If you don't have a food processor you can also use a pastry cutter or even a fork it just takes a bit longer. The key is to keep the butter cold, so it will create little pockets of goodness when it bakes.
Once the butter and flour are combined pour it into a medium bowl; add the sugar, salt and baking powder. Next add all of the wet ingredients; the dough will form a sticky ball. Add the yummy mix-ins (if you wanted a lighter scone you can also chop the almonds to a finer texture but I like the bite). As you can see below lighting was not my friend the day I made these, sorry for the terrible pic of the mix ins. I've learned to just roll with it especially when its a cold rainy day.
Using a bit of gluten-free flour blend dust a cookie sheet or pizza pan and then turn the dough onto the surface. Get a little more of the gluten-free flour blend on your hands and gently pat the dough so that its about 1/2 inch thick. Cut the dough into triangles or whatever shape you like using a knife or pizza cutter. Bake in the oven at 400* for about 25-30 min.
Remove from the oven and baste the hot scones with a bit of melted butter. I like to serve mine with a bit of honey which I have heated on the stove with some fresh thyme. Thyme infused honey is the perfect addition to these Cherry Almond Scones with Goat Cheese and Thyme.
