Living The Gourmet Broccoli Rabe Pasta Toss
- 1 bunch broccoli rabe
- 15 ounces beans can of cannelloni, drained
- 4 tablespoons olive oil
- 4 cloves garlic - crushed & chopped
- 1/2 teaspoon red pepper flakes
- 1/2 cup sun dried tomatoes - chopped coarse
- 1/4 cup chicken broth
- 1 tablespoon fresh lemon juice
- 1/2 box noodles your favorite
- grated romano cheese
- In a large frying pan heat oil, garlic, red pepper flakes, sun-dried tomatoes. Allow the garlic to become slightly toasted.
- Add the broccoli rabe and the broth: cover and cook until the broccoli turns bright green. Uncover and continue to cook about another 3-4 minutes. Add the beans and lemon juice, toss, cover and turn the heat off.
- Prepare the noodles as directed and add to the broccoli rabe. Garnish with the Romano Cheese.
