Chocolate Cookies
- 1 3/8 cups dark chocolate 70% cacao
- 2 1/8 cups flour
- 9/16 cup cocoa powdered
- 9/16 tablespoon baking soda
- 1 cup butter
- 1 1/8 cups brown sugar
- 6 tablespoons sugar
- 13/16 teaspoon fleur de sel substitute regular salt
- 3/4 teaspoon vanilla extract
- Chop the chocolate finely.
- Sift the flour with the cocoa and the baking soda.
- Cream the butter and add the two types of sugar, salt, and the vanilla.
- Add the chopped chocolate.
- Knead the dough as little as possible and shape it into loaves, approximately 4 centimeters in thickness.
- Refrigerate for at least 1 hour.
- Preheat the oven to 170C.
- Slice the loaves into 1 centimeter slices and place the cookies on a wax paper lined baking sheet.
- Bake for 11 to 12 minutes.
