Thai Chicken & Quinoa Patties
- 1 egg white
- 250 grams chicken breast
- 250 grams chicken thigh fillets
- 60 grams quinoa
- 1 tablespoon fish sauce
- 2 teaspoons grated lime zest
- 1/4 cup coriander
- 100 grams jalna no fat yoghurt
- 2 tablespoons lime juice
- 2 tablespoons sweet chilli sauce
- 150 grams wombok ( finely shredded )
- 150 grams English spinach
- 150 grams cucumber (halved lengthwise then sliced )
- 150 grams cherry/mini roma tomatoes
- 100 grams carrot ( finely grated )
- 80 grams red onion ( finely sliced )
- 4 eggs
- 1 long red chilli
- 1 - 2 cloves of garlic ( depending on taste )
- 1 stalk of celery (finely sliced )
- Place Quinoa in simmering basket and thoroughly rinse. Add 4 eggs thoroughly washed on top of quinoa.ndd 900 g water to the bowl and steam for 15 minutes, Varoma, speed 3.nefresh in cold water and set aside.neel eggs when cooled and set aside also.
- Dry bowl and mince chicken in two batches by placing in closed lid position and turbo 3-4 times. Set aside.
- Add coriander, chilli and garlic and chop 2 - 3 seconds speed 6.ndd quinoa, chicken, egg white, fish sauce and lime zest.nix 20 seconds, reverse, speed 3 with the aid of the spatula.nsing damp hands divide and shape the mixture into eight patties.
- Meanwhile make the salad and dressing.nlace yoghurt, lime juice and sweet chilli sauce into a bowl and mix together.nombine salad ingredients and place on a serving platter or individual plates. Top with cooked eggs quartered.
- Cook patties on lightly sprayed frypan or barbecue for approx. 3 minutes each side or until cooked through. nlace patties on top of salad and drizzle with yoghurt sauce.
