Thai Chicken & Quinoa Patties

  1. Place Quinoa in simmering basket and thoroughly rinse. Add 4 eggs thoroughly washed on top of quinoa.ndd 900 g water to the bowl and steam for 15 minutes, Varoma, speed 3.nefresh in cold water and set aside.neel eggs when cooled and set aside also.
  2. Dry bowl and mince chicken in two batches by placing in closed lid position and turbo 3-4 times. Set aside.
  3. Add coriander, chilli and garlic and chop 2 - 3 seconds speed 6.ndd quinoa, chicken, egg white, fish sauce and lime zest.nix 20 seconds, reverse, speed 3 with the aid of the spatula.nsing damp hands divide and shape the mixture into eight patties.
  4. Meanwhile make the salad and dressing.nlace yoghurt, lime juice and sweet chilli sauce into a bowl and mix together.nombine salad ingredients and place on a serving platter or individual plates. Top with cooked eggs quartered.
  5. Cook patties on lightly sprayed frypan or barbecue for approx. 3 minutes each side or until cooked through. nlace patties on top of salad and drizzle with yoghurt sauce.
