Green Tomato And Pimento Cheese Casserole

  1. Preheat oven to 375u0b0F.
  2. Coat casserole dish with nonstick cooking spray. Set aside.
  3. Cut tomatoes into 1/2-inch slices. Dice onion. Mince garlic.
  4. Mix pimento cheese, heavy cream, eggs, salt, and pepper in mixing bowl until combined.
  5. Melt butter over medium heat in saute pan. Add onion and cook until translucent, 3-4 minutes. Add garlic and cook until fragrant, 1 minute.
  6. Remove onion mixture from heat. Add to pimento cheese mixture and stir until well combined.
  7. Lay single layer of green tomatoes in prepared casserole dish. Top with 1/3 of pimento cheese mixture. Repeat to make 3 layers.
  8. Mix panko breadcrumbs, butter, Parmesan, thyme, and salt in bowl.
  9. Spread panko mixture over top of casserole. Cover casserole dish with aluminum foil.
  10. Transfer casserole dish to middle rack of oven and bake 40 minutes.
  11. Remove casserole dish from oven. Carefully remove foil.
  12. Return casserole dish to oven. Bake until bubbly and golden, another 12-15 minutes.
  13. Check to see that casserole is done. Remove from oven or add time as needed.
  14. Let cool 10 minutes. Slice and serve warm.
