Shrimp And Ham Fried Rice
- 5 tablespoons Crisco Pure Vegetable Oil OR 5 tablespoons Crisco(R) Puritan(R) Canola Oil with Omega-3 DHA
- 1/2 teaspoon salt
- 2 large eggs beaten
- 3 green onions sliced
- 1/2 cup shrimp peeled, deveined and roughly chopped
- 1/4 cup chopped ham
- 4 cups cooked rice cold
- 1/2 cup frozen peas
- 1/4 cup bamboo shoots canned diced
- 2 tablespoons soy sauce
- salt
- pepper
- sliced green onions Additional, for garnish
- HEAT 1 tablespoon oil in a large skillet or wok over medium high heat. Whisk salt into beaten eggs. Add to pan. Cook until firm, breaking into small pieces. Remove and reserve. Add remaining oil to pan.
- ADD green onions, shrimp and ham. Cook until shrimp is pink. Break up cold cooked rice with a fork. Add to pan. Stir until rice is heated and the grains are separated.
- Add peas and bamboo shoots. Stir until thoroughly heated and mixed.
- Add soy sauce. Mix thoroughly. Add reserved cooked eggs. Season with salt and pepper to taste.
- Garnish with green onion slices if desired. Serve with additional soy sauce if desired.
