Grilled Teriyaki Chicken Kabobs
- 2 pounds chicken cut into 1 inch cubes
- 1 red bell pepper
- 1/2 red onion
- 1/2 pineapple or 1 small can pineapple chunks
- 1/2 cup soy sauce
- 1/3 cup honey
- 1/8 teaspoon onion powder
- 1/8 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- For marinade, combine soy sauce, honey, onion powder, garlic powder and ginger. Set aside 1/4 cup
- Add chicken and refrigerate 30 minutes (up to 1 hour)
- Cut red pepper, red onion and pineapple (if necessary) into 1 inch pieces
- If using bamboo skewers, soak while chicken marinates
- Preheat grill to a medium heat
- Prepare skewers by adding red pepper, onion, pineapple and chicken. Repeat the pattern until all chicken is skewered
- Oil grill well and place kabobs over medium heat. Grill 6-7 minutes
- Baste and turn over to grill 6-7 minutes more. Baste again
- *larger chicken pieces may require more time
